A bright, citrusy, and effervescent gin cocktail with a perfect balance of tart lemon, sweetness, and refreshing bubbles from soda water.

Served in a tall Collins glass over ice, garnished with a lemon slice and sometimes a cherry.

Variations include the John Collins (using whiskey instead of gin) and the Elderflower Collins (adding elderflower liqueur).

• 5 cl Gin
• 3 cl Lemon juice
• 2 cl Sugar syrup
• 8 cl Soda water

1. Fill a shaker with ice.
2. Add gin, lemon juice, and sugar syrup.
3. Shake well until chilled.
4. Strain into a Collins glass filled with ice.
5. Top with soda water and stir gently.
6. Garnish with a lemon slice.
